Gingerbread house

Ingredients (Recipes from allrecipes)

  • 170 g butter
  • 190 g packed light brown sugar
  • 2 g lemon zest
  • 20 ml lemon juice
  • 120 ml molasses
  • 2 eggs
  • 375 g all-purpose flour
  • 9 g baking powder
  • 5 g ground ginger
  • 4 g ground allspice
  •  
  • 6 egg whites
  • 1792 g confectioners' sugar, sifted

Directions

  1. First cut out in thin cardboard: a side wall, 4 1/2 x 8 inches; an end wall, 4 1/2x5 inches; a triangular gable, 4 1/2x3x3 inches; and a roof rectangle, 4 1/2x9 inches. Tape the rectangular end wall piece to the triangular gable piece: match the long side of the triangle, 4 1/2 inches, to one of the 4 1/2 inch sides of the end wall.
  2. In a large bowl, cream butter and sugar until light and fluffy. Stir in lemon zest, lemon juice, and molasses. Gradually beat in 2 eggs. Sift the flour, baking powder, and spices together; stir into creamed mixture. Wrap dough in parchment paper, and refrigerate for 1 hour.
  3. Turn out dough onto a lightly floured surface. Divide into 6 portions, 2 slightly larger than the others. On a lightly floured surface, roll out the 4 smaller pieces to approximately the size of the side wall and the end wall with gable templates; cut out two of each. Roll out remaining dough, and cut into two rectangular roof pieces. Transfer gingerbread onto greased baking trays.
  4. In a preheated 375 degree F (190 degrees C) oven, bake gingerbread for 10 minutes, or until crisp. When removing from the oven, leave the gingerbread on the baking trays for a few minutes to set, then transfer to wire racks. Leave out overnight to harden.
  5. In a large bowl, lightly whisk 2 egg whites. Gradually beat in approximately 5 cups confectioners' sugar. The icing should be smooth and stand in firm peaks. Spread or pipe a 9 inch line of icing onto a cake board, and press in one of the side walls so that it sticks firmly and stands upright. If necessary, spread or pipe a little extra icing along either side to help support it. Take an end wall and ice both the side edges. Spread or pipe a line of icing on the board at a right angle to the first wall, and press the end wall into position. Repeat this process with the other two walls until they are all in position. Leave the walls to harden together for at least two hours before putting on the roof. Spread or pipe a thick layer of icing on top of all the walls, and fix the roof pieces in position; the roof should overlap the walls to make the eaves. Pipe or spread a little icing along the crest of the roof to hold the two pieces firmly together. Leave overnight to set firmly.
  6. When ready to decorate, make the remaining icing. In a large bowl, lightly whisk 4 egg whites, and mix in remaining confectioners' sugar as before. Use this to make snow on the roof, and to stick various candies for decoration. Finish with a fine dusting of sifted confectioners' sugar.
..... I always wish to make a gingerbread house for Christmas with my boys  ...... Finally, we did it today...It's not hard to make but needs love and happiness while making it....:))

Orange cake


I have made this beautifully light, moist orange cake, full of flavor from fresh orange juice and zest.
It's  really surprised  me,  for how absolutely Delicious this cake was going to be.  Its light and airy while still being so incredibly moist and flavorful.  The glaze has just the right amount of citrusy sweetness.


Ingredients

250 g Canola oil 
220 g caster sugar
4 medium eggs
1 1/2 tsp finely grated orange zest
250 g cake flour
3 tsp baking powder
1/4 tsp salt
85 ml freshly squeezed orange juice

For the icing:

125 g icing sugar
5 tsp freshly squeezed orange juice

Method:

1. Preheat the oven to 170C.
2. Using an electric whisk, the eggs  and sugar together for 4-5 minutes until very pale. Beat in the orange zest. Add the flour alternately with the oil and mix in well, then slowly mix in the orange juice.
3. Spoon the mixture into the prepared tin and bake on the middle shelf of the oven for 45-50 minutes or until a skewer, inserted into the center of the cake, comes out clean.
4. Leave the cake, in its tin, to cool on a wire rack, then carefully remove the sides and base of the tin and peel off the paper. Put it onto a serving plate.

For the icing, sift the icing sugar into a bowl and stir in the orange juice until you have a spreadable consistency. Spread it over the top of the cake, letting it drip down the sides, and leave to set. Serve cut into slices, and store any leftovers in an airtight container.

Perkedel kentang/potato fritters

Perkedel Kentang


Ingredients:
250 gr potatoes
6 small shallots
1 spring onion
1 maggi blok
2 eggs
vegetable oil
1 tsp pepper
1/2 tsp nutmeg
salt to taste


Cara membuat:/method:
Cook the potatoes and mash them. Cut the shallots into thin slices and the celery and the spring onion fine. Heat in a wok 2 tbsp of oil and fry the shallots for 3 minutes then drain on kitchen paper. Separate the eggs and whisk the yellows. Mix all ingredients except the egg whites and form a mini ball of the mixture . Heat in a skillet the oil, dip the potato ball  through the egg whites and fry them until golden brown. Drain before serving.

Grandma McNaughton's Soft Cookies


Grandma McNaughton's Soft Cookies

1 c. shortening
2 c. sugar
3 eggs
1 1/2 tsp. vanilla extract
1 c. buttermilk
1 tsp. baking soda
5 c. all-purpose flour
1/2 tsp. nutmeg
1/2 tsp. salt
2 tsp. baking powder

Pink Icing:
1 c. butter, softened
5 1/2 c. powdered sugar
evaporated milk, as needed
1 tsp. vanilla extract
a few drops of red and blue food coloring  

In a large bowl, cream shortening and sugar; add eggs and vanilla.  In a small bowl, combine buttermilk and baking soda.  Stir in half the buttermilk mixture.  Combine flour, nutmeg, salt and baking powder.  Stir in dry ingredients alternately with buttermilk mixture.  Dough will be tender.  With a rolling pin, roll dough to 1/2-inch thick, using generous amounts of flour.  Cut out cookies with a round cookie cutter.  Bake on a greased cookie sheet.  Bake for 10 minutes at 350 degrees.  Do Not Over bake.  The cookies should be soft.  Cool completely and spread with pink n blue icing.

For the icing:  Beat butter until fluffy.  Add one cup of powdered sugar at a time and beat until light and fluffy, adding evaporated milk as needed for desired consistency.  Add vanilla extract, almond extract and red food coloring.  Beat until evenly distributed.  Spread over cooled cookies. 
My Husband, asked me to make this Soft cookies.., So I decided to make it for him today before he got back from his business trip tomorrow ..., well...it seem I have to make another batch of cookies for him, cause my boys ate them all...:))...

Angsio kaki ayam

Bahan :

1 Kg Ceker yang bagus
4 siung bawang putih
2 cm jahe
2 sdm saos tiram
2 sdm minyak wijen
3 sdm ang ciu
2 sdm tausi
Kecap manis secukupnya
Kecap asin secukupnya
garam + gula secukupnya sesuai selera
Lada halus secukupnya


Minyak goreng untuk menggoreng


Caranya :
1. Pertama cuci si ceker bersih-bersih.  Kulit luarnya dibuang semua sampe putih bersih. Beri cuka & garam agak banyak, aduk-aduk, tunggu sebentar lalu  bilas dengan air bersih. Tiriskan.

2. Panaskan minyak goreng diwajan. jangan lupa sediakan juga tutupnya. Sebab, menggoreng si ceker ini, agak serem juga ,meletup2 hebat., kalau nggak hati2 bisa kecipratan minyak ..

3.  Ceker yang sudah digoreng, di masukkan ke baskom yg sudah diiisi air,  rendam  kira2 15-20 menit kemudian tiriskan.

4. Didihkan air secukupnya di  panci presto,. Masukan ceker + semua bumbu dan bawang putih + jahe.. . masak sampai tombol prestonya naik. matikan api., lalu tunggu sampai tombolnya turun lagi.
Paling enak bila disimpan semalaman di kulkas setelah matang , agar bumbu rasanya lebih meresap.


Jus Sawi Hijau

 Jus  sayur  itu ternyata enaakkkkk banget, segar dan banyak vitaminnya...coba deh, pasti nggak nyesel!!


Jus Sawi Hijau

Bahan:

150 gram sawi hijau / caisim (kira2 setengah ikat)
300 gram nanas (cari nanas madu yang manis)
air dingin secukupnya

Cara membuat:

Potong2 sawi hijau beserta batangnya.
Nanas dipotong kecil2.
Masukkan sawi dan nanas ke dalam blender, tambahkan air dingin sedikit. Blender sampai semuanya halus.
Untuk 4 gelas.

Wonton Soup


Ingredients:
3 oz raw shrimps
1tsp dried shrimp (fried and crushed)
3 oz ground pork
4 water chestnuts, finely chopped
3 spring onions finely chopped
1 tsp cornstarch
1/2 tsp salt
1 tsp oyster sauce
1/4 tsp sesame oil
24 wonton wrapper
1 egg white, slightly beaten

Soup:
4 cup chicken broth
1 tsp salt
a dash of ground white pepper
2 tbsp chopped spring onions
chopped lettuces (optional)

Method:
Rinse, peel and divine shrimps. Chop finely the shrimp. In a bowl, mix chopped shrimp, fried dry shrimp, ground pork, water chestnuts, spring onions, cornstarch, salt, sesame oil, oyster sauce and ground white pepper.

Take 1/2 tsp of filling mixtures in center of wonton wrapper.Fold and form a triangle shape of wonton. Brush one corner of triangle with white egg and bring corners together to seal. Repeat with the remaining wonton wrappers. Cover wonton filling and wrapper with plastic wrapper to keep them dried out.

On a saucepan, heat water to boiling and when it;s boiling, reduce the heat and add wonton. Simmer for about 2 minutes or until wonton is cooked through (floating), then drain and rinse it under cold water. Place in a bowl and add some cooking oil/sesame oil to keep them from sticking.

On a cooking pot, heat the chicken broth and salt. Add spring onions , chopped lettuces, and wonton to the soup. Remove from the heat and serve hot.

Corn Fritters/ Perkedel Jagung

400g can sweetcorn, drained
1 red chili, reseeded and finely chopped (optional)
4 green shallots, sliced
1 tsp ground coriander
pinch of salt
1 egg
1/4 cup rice flour
1 tbsp plain flour
vegetable oil for cooking


Method:

Combine corn, chili, shallots, coriander, salt, egg and flours. Leave to stand for 30 minutes. Heat oil in a wok or frying pan. Drop spoonfuls of mixture into oil and cook until golden brown.

Serve with chilly sauce.

Chicken and Veggie Tortilla Wrap

Chicken and Veggie Tortilla Wrap 
Yields for 2

Ingredients:


2 tortillas
2 hard boiled eggs, shelled and smashed
1 tomato, chopped
mayonnaise or any kind of dressing you like
cooked chicken breast (barbecued, roasted or pan-fried)
Lettuce leaves
cheddar cheese (optional)


Steps:

Arrange all the ingredients in the middle of the tortilla and wrap it up. That's all!, hmmm yummy lunch.

soft Tortillas

Me encanta la comida mexicana, El alimento mexicano es delicioso, 
INGREDIENTS:

2 cups flour
1/2 teaspoon salt
1/2 teaspoon baking powder
1/4 cup butter
3/4 cup warm water
Mix these ingredients up. Using your hands, crumble up the butter  until it's a coarse texture. 
Add in the warm water. You may need to add a little more if desired for a looser consistency.
Dough should not bee too sticky or too dry.
Kneed it in your hands or mixer for a couple of minutes. Should feel smooth and elastic. 
Break into 8-10 golf ball-sized balls.
Get a warm, damp cloth and set it on top of dough balls for about 20 min.
Flatten balls into discs with hands making nice circles and then roll them out into tortillas with rolling pin. Get medium-hot griddle, and lay tortillas down for about 8 seconds and then flip (they should have a little coloring like brown spots) and cook for additional 60-90 seconds. 
May bubble up. Flip over and press down with spatula. They should puff up a bit.

Place finished home-made tortillas on a large plate and cover with a warm towel until ready to eat.

Roast Chicken

Ingredients:
1 medium roasting pan
1   4 – 5 pound roasting chicken
1 full head garlic
1  lemon
1 bunch thyme ( I use dried thyme)
2 carrots
1 celery
3  potatoes ,2 sweet potatoes
1 onion
3 tablespoons butter
2 tablespoons olive oil
salt and pepper

Directions

 

Preheat oven to 425 degrees.  Cut up onions, potatoes, beets, carrots and parsnips (peel these last three) and put them into the bottom of the roasting pan.  Chop up a few sprigs of the time, add olive oil and salt and pepper and mix together.

 

Place a clean chicken into roasting pan, stuff chicken with thyme , 1/2 lemon, and cut garlic (cut whole garlic head in half and stuff it into the inside of the chicken (it’s okay to keep the peel on)).. After vegetables and garlic are chopped, mix them all together in a large bowl and drizzle with olive oil , salt, and pepper. Scatter them around the chicken that is in the pan. Drizzle a little more olive oil over the chicken and salt and pepper to taste. 

Place into a 425 degree preheated oven and bast after the first 30 minutes and then bast every 10-15 minute after that. Do not bast chicken the last 10 minutes of cooking so that the skin can get nice and golden and crispy. Chicken is done when it reaches an internal temperature of 160 degrees. About 1 1/2 hours.

 
 Wow...., the result is so unbelievable ........delicious tender roast Chicken   , with yummy veggies...:)) all gone within an hour..., so Happy!!!

Mushroom n cheese Burgers

Since I don't have the Swiss cheese , I called it Mushroom and cheese burger...:)) still yummy with cheddar cheese.

Ingredients

  • 1-1/2 pounds ground beef
  • 1 chopped onion
  • salt n pepper to taste
  • 1 pound sliced fresh mushrooms
  • 1 can condensed cream of mushroom soup
  • 2 tbs Worcestershire sauce 
  • 6 slices Swiss cheese ( Cheddar cheese)
  • 6 hamburger buns, split

Directions

  • Shape beef n chopped onion, seasoned with salt n pepper  into six patties. In a large skillet, cook patties over medium-high heat for 5-7 minutes on each side or until a meat thermometer reads 160° and juices run clear. Remove to paper towels; drain, reserving 2 tablespoons drippings. Saute mushrooms in drippings until tender.
  • Combine  Mushroom soup, mushrooms, and Worcestershire sauce in a pan. Put on the stove and let simmer.
  • Top each patty with a slice of cheese. Remove from the heat; cover and let stand until cheese is melted. Serve on buns topped with mushrooms. Yield: 6 servings.




Au Gratin Potatoes (white sauce)



For this recipe, you make a white sauce for the filling from the flour and cream.  Once the white sauce is made, add the cheese to make a cheese sauce.  This makes a creamy casserole.



Ingredients:

4 Large baking potatoes
3 Cups white Bechamel sauce
1 teaspoon salt
1/4 teaspoon white pepper
3/4 cup grated Mozzarella cheese
1/4 cup grated cheddar cheese

Bake potatoes in oven at 400 degrees until completely
cooked. Cool for 30 minutes at room temperature, then slice
into 1/2" thick rounds. Mix together the white Bechamel sauce, salt
and white pepper. Add remaining ingredients.
Fold in potatoes. Place mixture in covered baking dish in a
300F oven for 1 hour, or until potatoes are hot all the way
through. Remove the cover and allow potatoes to brown.

White , Bechamel Sauce recipe:
1 quart cream
2 ounces flour
2 ounces clarified butter
salt and pepper to taste

In a saucepan, combine the flour and butter. Cook over a
low flame, for about 15 minutes until the mixture begins
to bubble. Stir frequently so the roux does not color.
Gradually add the half & half, stirring out the lumps as
it thickens. After the entire amount of cream has
been added, cook for 45 minutes over a low flame, stirring
occasionally to keep the mixture from sticking to the saucepan.
Season to taste with salt and pepper.

nasi goreng kunyit n kencur

BAHAN:
750 gr nasi putih dingin
100 gr teri medan goreng matang
3 sdm minyak goreng
emping goreng untuk menyajikan

HALUSKAN:
5 cm kunyit
6 bh bawang merah
8 cm kencur
2 sdt garam

CARA MEMBUAT:
1. Tumis bumbu halus sampai matang.
2. Masukkan nasi sambil diaduk hingga matang.
3. Angkat lalu sajikan dengan taburan teri medan goreng dan emping goreng.

Untuk 6 orang.

Semur Ayam

bahan:
* 1/2 kg ayam  dipotong menjadi 8 bagian
* 1 buah kentang yang besar, dipotong kecil
* 1 siung bawang bombay yang kecil
* kecap manis secukupnya
* air secukupnya
* garam secukupnya
* bumbu penyedap secukupnya
* minyak goreng dan mentega, untuk menumis
* bawang goreng, untuk taburan

Bumbu halus :
* 4 siung bawang merah, dipotong kasar
* 4 siung bawang putih, dipotong kasar
* 1 buah tomat yang kecil
* sedikit pala


caranya:
1. Ayam dan kentang dicuci bersih lalu digoreng dulu secara terpisah, sebentar saja. Angkat dan sisihkan.
2. Semua bahan untuk bumbu halus dicuci bersih lalu dhaluskan.
3. Siapkan wajan, panaskan minyak goreng dan mentega. tumis bawang bombay dan bumbu yang sudah dihaluskan tadi hingga harum.
4. Masukkan air, kecap manis, ayam dan kentang.
5. Beri garam dan bumbu penyedap, aduk rata. Masak hingga matang dan airnya sesuai dengan selera Anda .
6. Siapkan mangkuk sajinya, taburi dulu dengan bawang goreng di dalamnya, baru masukkan semur ayam tadi.
7. Sajikan hangat.



HUZAREN SLA


BAHAN:
100 g daun selada bokor, sobek kasar
2 butir telur ayam rebus, kupas, cincang kasar
100 g daging asap, potong dadu 1 cm
1/4 sdt garam
1/4 sdt merica

Sayuran, potong dadu 1/2 cm:
40 g buncis, rebus
2 buah (300 g) kentang rebus
2 buah (200 g) mentimun
100 g bit merah, rebus, kupas
150 g daging bush nanas
2 bush (300 g) apel, kupas
100 g wortel, kupas, rebus

Saus, aduk rata:
2 kuning telur ayam
2 sdm mustard
100 g mentega, lelehkan
400 ml minyak zaitun
2 sdm jeruk nipis
1/4 sdt garam
1/4 sdt gula pasir

CARA MEMBUAT:
- Campur rata daun selada, telur, daging asap, garam, merica dan aneka sayuran potong.
- Siram dengan sausnya. Sajikan.

chili, cheese and potatoes

Chili  Mix Ingredients:

Red kidney beans, onion, cinnamon, garlic , salt, and spices


Additions:

2 pounds ground sirloin (or chuck or round)
1 28-ounce can tomato sauce
1/2 cup barbeque sauce (sweet rather than smoky)
1/2 to 1 1/2 cups water, depending on your desired chili thickness
1 tablespoon brown sugar
1 tablespoon red wine vinegar


 Directions:

Crumble and brown ground meat in a 3 to 4 quart pot with 1 or 2 tablespoons oil, if desired. Add contents of chili mix. Stir in additions above, bring to a simmer, cook on medium-low heat, covered, for 25 minutes.


Cheese sauce:

1/2 stick plus 2 tablespoons Butter
2 tablespoons flour
2 cups Milk
2 cups  Cheddar Cheese

Place in saucepan and whisk over medium heat until thickened.

Siomay
steamed pork/prawns dumplings

Bahan-bahan:
 ingredients:

300 gr minced pork
200 gr minced prawns
250 gr tapioca flour
1 egg
1/2 tsp salt
2 tbs sugar
1 tsp pepper
2 spring onion
1 tbs oyster souce
1 tsp sesame oil
1 pack  won ton wrappers


Cara membuat:
preperation/method:
Slice the spring onion finely. Mix the meat, the prawns, the tapioca, the salt, sugar,  the pepper, the spring onion, oyster sauce, and the sesame oil well together. Put some of the mixture on a wonton wrapper and fold it together. Steam the siomay for 30 minutes until done.( Garnish with shredded carrot (optional) ).

my boys r growing up so fast


nice evening.., my boys r helping me to prepare the table for dinner...ahhh I'm so Happy!!!

roti bluder

Lagi teringat sama lembutnya roti Bluder..., hmmm ...keburu nggak ya buat sore2..., soalnya harus mengantar papa mertua ke dokter.., eh...tapi tiba2 ibu mertua bilang :, nggak jadi deh ke dokternya...
ya sudah , aku langsung saja mengambil timbangan dan beraksi dengan resep roti Bluder.

tapi satu jam kemudian..., ketika adonan sudah mulai kalis dan siap untuk fermentasi, ibu mertua memutuskan untuk pergi ke dokter malam ini juga...., yaaaaa..gimana nih adonan sudah terlanjur di buat., hmm ya pasrah aja deh aku masukan semua adonan ke frezeer.
Pulang dari rumah sakit , ternyata sudah malam sekali.., sepertinya nggak kuat deh harus manggang roti lagi.

Pagi pagi aku keluarkan adonan beku dari frezeer, siapa tau masih bisa mengembang lagi.
hasilnya ya ini.., walau teksturnya kurang lembut tapi masih Ok .





Roti Bluder
makes 16 breads
 
140 gr egg yolks
50 gr egg whites
70 gr caster sugar
300 gr bread flour
11 gr instant dry yeast
60 gr cold milk
70 gr butter, chopped, softened
                                                                     1/2 tsp salt
                       dark chocolate chips, cheese, ham, peanut butter (for filling) optional.

                                                                            Egg wash:
1 egg
4 tsp milk


 Direction:

1. Whisk egg yolks, egg whites, and caster sugar until thick and pale. Meanwhile, sift flour and mix with yeast in a bowl.
2. Add flour mixture to the egg mixture. Mix until well combined.
3. Add cold milk. Knead until milk is absorbed.
4. Add butter and salt. Knead until dough starts to pull away from the bowl. (note: dough will be sticky )
5. Cover with plastic wrap and let rise at room temperature for about 1 hour. 
Meanwhile, prepare  muffin pan or 16 paper cases (place them on a baking sheet).
6. Knock dough down. On a lightly floured surface, knead the dough into a ball. Divide into 50-gram balls. Flatten each ball and put 1/8 of the filling in the center. Enclose the filling and place on prepared muffin pan or paper cases, seam side down. Repeat with remaining dough and filling.
7. Let rise at room temperature for about 60 minutes. Meanwhile, preheat oven to 180 C. Brush each dough with egg wash and sprinkle some topping if you wish.
8. Bake for 20 minutes.

Orak Arik Tempe

Bahan :
- 300 gr tempe, potong kecil-kecil
- 3 siung bawang putih, iris halus
- 4 buah bawang merah , iris halus
- 7 buah cabai hijau besar, iris kasar
- 2 lembar daun salam
- 1 ruas lengkuas, memarkan
- 250 cc air
- 8 sdm kecap
- Garam dan gula secukupnya
- Minyak goreng untuk menumis
Cara membuatnya :
  • Tumis bawang putih dan merah hingga harum, lalu masukkan cabai, salam, lengkuas aduk rata.
  • Masukkan potongan tempe, aduk rata lalu tambahkan air dan kecap. Biarkan mendidih.
  • Kecilkan api lalu tambahkan garam dan gula secukupnya. Masak hingga airnya menyusut. Aduk sampai sedikit kering lalu angkat dan sajikan.
