Orak Arik Tempe

Bahan :
- 300 gr tempe, potong kecil-kecil
- 3 siung bawang putih, iris halus
- 4 buah bawang merah , iris halus
- 7 buah cabai hijau besar, iris kasar
- 2 lembar daun salam
- 1 ruas lengkuas, memarkan
- 250 cc air
- 8 sdm kecap
- Garam dan gula secukupnya
- Minyak goreng untuk menumis
Cara membuatnya :
  • Tumis bawang putih dan merah hingga harum, lalu masukkan cabai, salam, lengkuas aduk rata.
  • Masukkan potongan tempe, aduk rata lalu tambahkan air dan kecap. Biarkan mendidih.
  • Kecilkan api lalu tambahkan garam dan gula secukupnya. Masak hingga airnya menyusut. Aduk sampai sedikit kering lalu angkat dan sajikan.

Thai Kitchen Red Curry Chicken Salad Lettuce Wraps


Thai Kitchen Red Curry Chicken Salad Lettuce Wraps
1/2 cup mayonnaise
1/4 cup sour cream
2 tbsp. Thai Kitchen® Red Curry Paste
1 tbsp. fresh lime juice
2 cups shredded cooked chicken
1/4 cup chopped celery
1/4 cup chopped red onion
6 large iceberg lettuce leaves or 12 Bibb lettuce leaves
1/4 cup dry roasted peanuts, coarsely chopped
Chopped fresh Thai basil or cilantro (optional)

MIX mayonnaise, sour cream, Curry Paste and lime juice in large bowl until well blended. Add chicken, celery and onion; toss to coat well. Cover.

REFRIGERATE at least 30 minutes or until ready to serve.

SPOON chicken salad into center of each lettuce leaf. Sprinkle with peanuts and basil, if desired. Fold sides of lettuce over filling and roll up to serve.


Galantine

Ingredients:
 
500 gr daging sapi giling
50 gr breadcrumbs dengan 100 cc susu cair
2 butir telur ayam
2 sdm margarin
bawang bombay cincang halus
merica, pala, garam
2 sendok makan saus tiram 

aluminium foil.

Directions:
 
- Tumis bawang bombay dengan margarine, sampai wangi, angkat.
- Campurkan ke semua bahan ini, aduk rata.
- Masukkan dalam kantong plastik panjang/gulung dengan aluminium foil kukus selama 30 menit.
- Setelah matang, dinginkan, goreng sampai kekuningan dengan wajan datar, potong melintang, sajikan dengan saus.
- Pelengkap : daun selada, wortel rebus, buncis rebus, kentang goreng, acar mentimun

 
Saus :
 
1 sdm margarin
1 butir bawang bombay
200 cc kaldu
2 sdm kecap manis
1 sdm maggi blok 2 sdm saus tomat
½ sdt garam, bila perlu
1 sdt tepung maizena, larutkan dalam 1 sdm air

 
Cara Membuat :
 
- Panaskan margarin, tumis bawang bombay hingga harum,
- Masukkan kaldu, kecap, saus inggris, saus tomat dan garam.
- Setelah mendidih, masukkan larutan maizena.
- Aduk hingga saus mengental. Angkat.

Polish Meat and Potatoes

Ingredients

  • 4 potatoes, peeled and cut into 1 inch cubes
  • 1 onion, chopped
  • 2 green bell peppers, cut into 1 inch pieces
  • 1 g onion powder
  • 1 g garlic powder
  • 3 g salt
  • 0.5 g black pepper
  • 60 ml vegetable oil
  • 454 g kielbasa sausage, cut into 1 inch pieces

Directions

  1. Heat oil in a large skillet over medium-high heat. Cook onions and potatoes for 15 minutes, stirring occasionally. Reduce flame to med and stir in bell pepper, onion powder, garlic powder, salt and pepper. Cover, and cook 5 minutes. Stir in kielbasa, cover, and cook for 15 minutes, or until onions are caramelized.

 

Roast Pork/Panggang babi garing

Babi Panggang 

BAHAN :
500 gr daging babi bagian samcam

BUMBU-1 (Haluskan dan campur jadi satu) :
a. 3 siung bawang putih
b. 1 sdt garam
c. 1/4 sdt merica
d. 1 sdm Angciu
e. 1 sdm kecap asin
f. 1/2 sdt bumbu ngohiang
g. 1/2 sdm gula pasir

BUMBU-2 :
a. 2 siung bawang putih (haluskan)
b. 1/2 sdt garam
c. 1/2 sdt baking powder
d. 1/2 sdm cuka

SAUS TAOCO :
a. 3 sdm taoco ( haluskan )
b. 1 siung bawang putih di geprek
c. 100 cc air
d. garam dan gula
e. 1 sdm maizena

CARANYA MEMBUAT :
1. Rebus daging hingga empuk (pakai presto 10  menit)
2. Lumuri bagian kulit dengan bumbu 2, lalu di tusuki dengan garpu.
3. Kerat-kerat daging kira kira 2 cm, lumuri bagian daging dengan bumbu 1.
4. Diamkan di kulkas kira kira 3 jam hingga bumbu meresap.
5. Taruh di atas rak kawat, bawahnya di beri loyang,
6. panggang dengan api atas, sambil sekali sekali di lumuri sisa bumbu dan di bali balik.
7. panggang hingga kering.
8. Sajikan, di potong-potong dengan saus Taoco

CARANYA MEMBUAT SAUS TAOCO :
1. tumis bawang putih dengan 1 sdm minyak hingga harum, masukkan taoco, air, garam dan gula.
2. kentalkan dengan maizena yang telah di cairkan dengan air.

panggang Babi garing buatan my beloved hubby nih...., rasanya nggak kalah sama panggang babi Harum...., hmmmm yumm . kriuk ..kriuk...cesss.....:))

Opera cake


Ingredients
200g finely ground almond
100g caster sugar
6 eggs
50g butter, melted
60g all purpose flour
115g egg whites
55g confectioner sugar - i used caster sugar

Methods
-Preheat oven to 200C.. Prepare two pans (20 x 20 cm), greased and lined with baking paper.
-In a large bowl combine ground almond, caster sugar and 3 eggs, beat at high speed for 10 minutes, scraping often.
-Add remaining eggs one at a time, continue to beat for another 10 minutes.
Stir in 4 tbsp of almond mixture into melted butter and mix till well combined, set aside.
-Add sifted flour to the remaining almond mixture, mix well... put aside
In another bowl, beat egg whites til foamy, add sugar gradually and continue to beat until soft peaks formed.
-Take 1/3 of egg white and pour into almond mixture and mix it gently.. pour back almond mixture into the remaining 2/3 egg white mixture and continue to fold in gently.. don't over mix.
-Divide and spread into prepared pans, bake both pans at once for 20 min in 175C. Cool completely, remove from pans, discard paper and slice it into total 4 layers.



Coffee Syrup:
100 ml hot brewed espresso - u can of cos use 15g of instant coffee with 100ml hot water
100 g sugar

Mocha buttercream
100 g egg whites
200 g sugar
300 g unsalted butter - cubed and chilled and let it out once u start to whip ur egg white/sugar
1/2  tbsp mocha paste
1 tsp coffee oil - u can use coffee essence/flavor if u cant find coffee oil

Chocolate Ganache
200 g dark chocolate compound
200 g milk chocolate compound - i used a mixture of 70%, 64% and 55%)
75  g unsalted butter
250 ml fresh cream - i used double cream

Method
Coffee Syrup:
Mix all ingredients, stirring until sugar dissolves. Set aside.

Mocha butter cream:
1. Using double boiler.. heat egg white and sugar till sugar dissolved - use your thermometer ok.. heat till 65C..
2. Pour egg white mixture into your mixing bowl and whisk using high speed till mixture turns glossy.. add in cubed butter one at a time and continue to beat till its slightly fluffy.. (butter cream texture)
3. Add in coffee oil, mocha paste and 50ml of coffee syrup into butter cream.. stir till well combined.. set aside

Chocolate Ganache:
1. Chop the chocolate into small pieces.
2. Heat cream until warm. Remove from heat and pour it over chocolate.. let it sit for 5 min and stir
3. Add in butter and continue to stir well again.
4. Put it aside till it thickens.

Assembling
There are various way to assemble Opera, you can find many on internet. Heres my version..

- Place one sheet of  cake  upside down (top of the cake on bottom side).
- Brush thoroughly with coffee syrup until moist.
- Spread one part of coffee cream evenly over the cake.
- Cover with another sheet of cake , always upside down.
- Brush thoroughly with coffee syrup until moist
- Cover with thick ganache and cover with another sheet of cake .
- Repeat above steps until all cake , coffee cream and ganache are stacked completely. Chill for 10 minutes.
- Double boil remaining ganache over low heat just until simmer, pour evenly on the top. Chill for another 30 min.
- Trim the sides thinly to remove excess cream & ganache to reveal the layers.

Chiffon Ketan hitam


Chiffon Cake Ketan Hitam


Resep: Fatmah Bahalwan

Bahan A:
160 gr kuning telur
75 gr gula kastor
1 sdt vanilli

Bahan B:
240 gr putih telur

125 gr gula kastor
1 sdt garam

Bahan C:
50 gr tepung terigu protein sedang
100 gr tepung ketan hitam
1 sdt Baking Powder Double Acting

Bahan D:150 ml santan kental instant
3 sdm minyak sayur

Cara membuatnya:
  1. kocok bahan A hingga kental, sisihkan. Dengan mixer bersih lain, kocok bahan B hingga kaku.
  2. Tuang adonan B kedalam adonan A secara bertahap sambil diaduk hingga rata.
  3. Ayak Bahan C, tuang kedalam adonan pertama, aduk rata. Tuangi bahan D, aduk balik hingga rata.
  4. Tuang adonan kedalam loyang Chiffon yang telah dialas kertas, oven dengan suhu 200’C selama 20 menit, lanjutkan dengan suhu 150’C selama 30 menit lagi hingga matang.
  5. Angkat, balik loyang diatas alas kue, biarkan dingin. Lepaskan dari loyang, potong-potong.
